Quick and Easy Meals: Mini Chicken Pot Pies
Being the mother of a highly opinionated six-year-old, sometimes it’s hard to plan meals that we both will enjoy. I’m always open to experimenting with new recipes, especially ones with vegetables (y’all know how hard it is to get a kid to eat their veggies). However, one day on Pinterest I came across and exiting quick and easy meal I knew I had to try. Until I saw the picture, I never considered making pot pies. My daughter, the ever picky eater, doesn’t like her vegetables mixed together, but she does love chicken. So I knew this was something I could work with…and as a result we have a new favorite meal!
For my version of the meal, I used chicken I made the previous day in a crock-pot and only added in carrots (remember, we’re dealing with the pickiest of eaters). However, the possibilities are endless! Add as many or as little vegetables as you like and season to your taste. This meal is even perfect for the man of the house on game day or for any casual party you may host.
I highly recommend this recipe to anyone who loves the classic chicken pot pie.
