Cocktail Wednesday Episode 1: Watermelon Mojitos & Non-Alcoholic Sangria
It’s Hump Day! And I’m sure some of us need a cocktail by now. Here on Cocktail Wednesday I’ll be dishing about some of my favorite cocktails. Sometimes I will include drinks I spot from around the web and other times this weekly feature will include drinks I’ve made. For those of you who prefer non-alcoholic beverages, there will be something fun in these posts for you too! So, sit back relax and take a sip!
Today’s Featured Cocktail: Watermelon Mojitos

30 large fresh mint leaves, coarsely torn by hand
3 to 4 thick slices fresh watermelon
12 ounces light rum, such as Bacardi
1/2 cup simple syrup
6 tablespoons freshly squeezed lime juice (3 limes)
Sprigs of mint and spears of watermelon, for serving
Use a mortar and pestle to mash the mint leaves. Remove and discard the rind and seeds of the watermelon. Put the fruit into a food processor fitted with the steel blade and puree. Put the mashed mint into a large pitcher with 2 cups of pureed watermelon, the rum, simple syrup, and lime juice and stir to combine. Pour the mixture into a pitcher for serving.
Place ice cubes in 6 glasses and pour the mojito mixture into the glasses. Garnish with sprigs of fresh mint and spears of watermelon. Serve ice cold.
Spring is here and soon summer will be upon us, so why not serve up something summery and delicious to get yourself in the warm weather mood. I don’t know too many people who don’t love watermelon and if you can turn it into a fabulous drink then hey, go for it!

2 cups boiling water
2 black tea bags (or 2 teaspoons loose-leaf tea in an infuser)
2 cinnamon sticks
1/2 cup sugar
3 cups pomegranate juice
1 cup freshly squeezed orange juice
1 orange, sliced into thin rounds
1 lemon, sliced into thin rounds
1 lime, sliced into thin rounds
1 apple, cored and cut into 1/2-inch chunks
3 cups carbonated water
Pour boiling water over tea bags and cinnamon sticks and steep for 5 minutes. Discard tea bags and stir in sugar to dissolve.
In a large jar or pitcher, combine tea, cinnamon sticks, pomegranate juice, orange juice, orange, lemon, lime, and apple. Refrigerate for at least 1 hour and preferably overnight.
Just before serving, stir in carbonated water. Serve in glasses over ice.
Sangria is always a delicious treat with or without the added alcoholic kick. It’s a fresh cool drink that will always tingle your taste buds.
